STARTING a Mexican restaurant franchise was not something Sam Prince learned at medical school. But being a doctor has come in handy in the charitable projects his restaurant chain, Zambrero, funds.

Profits go towards Sam’s Emagine Foundation, which works in disadvantaged schools in indigenous Australia and developing countries and funds educational IT centres.
